Invoke a tropical feel at your next party by serving these super delicious rum drink recipes. Each recipe has been tested and are big hits at my gatherings. When serving a rum punch, I like to make a fruity ice ring ahead of time to help keep the punch cold. My recipes include Mount Gay rum which is high quality rum from my former home of Barbados. Feel free to substitute other rums in your recipes. Mount Gay Eclipse is an aromatic spiced rum while Mount Gay Silver is a clear rum. Get your party on and serve up some rum drinks!
Refreshing Rum Punch
Make your punch look more festive by preparing an ice ring the day before.
Ice ring
2 lemons cut into slices
3 oranges cut into slices
¼ cup mix of raspberries, cherries, blueberries, strawberries, and diced pineapple
In a Bundt pan place lemon and orange slices in an alternative pattern around the ring. Sprinkle raspberry mixture on top of fruit slices. Fill Bundt pan with just enough cranberry juice to cover almost cover the fruit. Place in freezer and freeze for several hours. This step forces the fruit to freeze in the middle of the ice ring and not float on top. Once the ice ring is frozen, add more cranberry juice to completely cover the fruit. Freeze over night. Just before serving the punch, place Bundt pan in hot water to loosen the ice ring. Place the ice ring in the punch bowl and add punch ingredients.
2 cups Mount Gay Eclipse
2 cups lemonade
2 cups orange juice
2 cups pineapple juice
6 cups lemon – lime carbonated beverage
Ice ring made with sliced fruit and cranberry juice
Chill all ingredients before serving. Lemonade and juices may be combined in advance. Combine all ingredients in a large punch bowl and garnish with fresh strawberries, if desired. Makes 24 half cup servings.
Classic Mojito
One of my favorite summer time drinks. This crisp drink will keep you feeling cool and fresh in the summer heat
2 teaspoons raw sugar (granulated brown sugar)
12 small mint leaves
1/4 cup Mount Gay Eclipse Silver
2 tablespoons fresh lime juice
1 (6-ounce) bottle club soda, chilled
1 mint sprig for garnish
Place sugar and mint in a tall glass and crush mint with muddle or with a wooden spoon. Fill glass with crushed ice. Add rum, juice, and club soda. Garnish with mint sprig, if desired. Makes 1 serving.
Pina Colada
3 oz Mount Gay Eclipse Silver rum
3 T. Coconut milk
3 T. Pineapple , Crushed
Put all ingredients into an electric blender with 2 cups of crushed ice. Blend at a high speed for a 30 seconds. Strain into a tall glass and serve with a straw. Makes 1 serving.
Punch for 100
It might seem appalling to use a large garbage can to make some punch, but just shrug your shoulders, buy a new rubber garbage can and wash it out with soap and water to remove any plastic reside. This punch is fun for a large gathering. The ingredient list can seem a bit daunting, so have guests bring an ingredient instead of a side dish. Decorate the garbage can with some tropical wrapping paper and place an inflatable plastic palm tree next to it for decoration.
New 30-gallon rubber garbage can
9 (750 ml) bottles Mount Gay Eclipse Silver
9 (750 ml) bottles Mount Gay Eclipse
4 (1-liter) bottles peach liqueur
30-40 pounds fruit sliced or wedged, (oranges, lemons, pineapples, grapes, strawberries, peaches, blueberries, and raspberries)
3 gallons orange juice
3 gallons pineapple juice
7 liters (about 30 cups) fresh lemon juice
2 liters grenadine (pomegranate syrup)
Ice
Pour the rums and the peach liqueur to the clean garbage can. Add the fruit and let it soak in the alcohol for one hour. Stir in the juices and grenadine syrup. Add 2 bags of chipped ice and let it chill. Serve over ice with fruit. Continue to keep the punch cold, adding ice as necessary. Makes 400 (half cup) servings. Enjoy!

The smoothness of rum makes it an ideal drink ingredient. Even just mixing it with something simple like coke.
